This one requires some work but I can wholeheartedly assure you that it’s worth it. I’ve used the base ingredients of this drink in many coffee beverages. It’s my go-to as a signature beverage as both the texture and flavors are often unexpected yet pair into something delightfully tropical and refreshing.
1oz pineapple juice
1oz lime juice
3/4oz maple syrup
Double shot espresso
Ensure all ingredients are thoroughly chilled before combining in a whipping siphon or Perlini, even the mint leaves. Charge the drink with two CO2 canisters and decant into a larger carafe. Swirl lightly to settle the foam before pouring over top a large ice cube. Garnish with additional mint leaves and a slice of pineapple. Sip and enjoy.
