If Bananas Foster was a coffee, it would be this drink.

INGREDIENTS

BROWN SUGAR CARAMEL

1/2 cup of unsalted butter

1.5 cups of light brown sugar

1/2 cup of heavy cream

1/4 teaspoon almond extract

1/2 teaspoon vanilla paste

SCREENDOOR

2oz of heavy cream

1/2oz of brown sugar caramel

Sprinkle of Maldon Smoked Sea Salt

6oz of filter coffee

Banana slices

Cane sugar for caramelizing bananas

BUILD

Melt butter in a medium saucepan. Once it's fully melted, add the brown sugar and stir until combined and brown sugar has melted. Add heavy cream (be careful, it may sputter) and stir constantly for 3-5 minutes until a silky, smooth consistency is reached. Remove from heat and add almond extract and vanilla paste. Once cooled, store in the fridge. 

Add heavy cream, brown sugar caramel, and a pinch of smoked sea salt into one half of a shaker. Dry shake with an agitator or use a milk frother until the mixture has doubled in size. Using the back of a spoon, float the caramel foam on top of your filter coffee.

For the garnish, slice your banana into pieces about half an inch thick. Thread them onto a cocktail garnish skewer and fully cover the top with sugar. Using a kitchen torch, carefully brulee the bananas until the sugar has melted formed a hard, amber shell.

Place caramelized banana garnish atop drink and serve.
