Bramble Bush

A drink that tastes like blackberry picking in the late days of summer.

INGREDIENTS

BRAMBLE SYRUP

200g cane sugar

100ml water

150g blackberries

2 vanilla pods

BRAMBLE LATTE

25ml Bramble Syrup

40ml espresso

200ml milk of choice

Fresh mint for garnish

BUILD

Place sugar and water in a saucepan on med-low heat until sugar is fully dissolved. During this time, scrape out both vanilla bean pods (keep both the paste and pods!)

Add blackberries along with the vanilla bean paste and pods. Simmer ingredients together for 15-20 minutes or until the blackberries have broken down into a somewhat jammy consistency.

Double strain the syrup through a cheesecloth and sieve to remove all the 'berry bits', for lack of a better term. Cool and then store in fridge for up to two weeks with vanilla pods. 

Add Bramble Syrup, freshly pulled espresso, and milk into a shaker with ice. Shake for 30 seconds until fully chilled and frothed. Strain atop fresh ice. Give a stem of fresh mint a good whack, expressing the mint oil, and then garnish the drink with it.
