INGREDIENTS
2oz cold brew
1oz pineapple juice
3/4oz lemon juice
1/2oz honey
3 large blackberries
3 fresh basil leaves
BUILD
In the a shaker, muddle your blackberries and honey together. Add cold brew, pineapple juice, lemon juice, and basil leaves before shaking for 30-45 seconds with ice. Double strain into a coupe glass and serve with a garnish of basil.
A fun science-y note: the frothy texture and head that forms on this drink comes from the addition of pineapple juice. It's high in an enzyme called bromelain that breaks down proteins and causes more air to be introduced into the drink when shaking. The effect is similar to what you might experience if you added an egg white.
