I initially thought this recipe wouldn't be "fun" enough for the blog but you know what, it's strawberries and espresso and vanilla... What could be more fun?
INGREDIENTS
STRAWBERRY SYRUP
400g fresh strawberries
200g cane sugar
5g vanilla paste
LATTE
25ml strawberry syrup
40ml espresso
200ml milk of choice
Fresh basil for garnish
BUILD
Clean and slice your fresh strawberries before placing in a bowl or container. Add the sugar on top and lightly mix to ensure the strawberries are fully coated. Place in the fridge for 5-12 hours until all the sugar has dissolved. The juicier and riper the strawberries are, the faster this process will happen.
Strain off the strawberry solids (but keep them, they're delicious!), and whisk in the vanilla paste. Store in an airtight bottle in the fridge.
Of note, this type of maceration syrup can easily be sized up or down in volume. With berries, my rule of thumb is two parts berries to one part sugar by weight.
This latte can be made hot or cold. I would suggest whole or coconut milk. Add your syrup and espresso, thoroughly stir to incorporate. Top with your cold or steamed milk and then add ice if appropriate. Garnish with a sprig of fresh basil so you get those nice aromatics with each sip.
