Dreams of Sorbet

This is a slight riff on the drink I made when I won the 2022 US Barista Championship. While it takes some preparation, the ending results is something that recalls the flavorful iciness of lemon sorbet and orange creamsicle.


  • Double shot of chilled espresso - roughly 40g
  • 15g of mango puree
  • 12g of grapefruit oleo saccharum
  • 15g of orange blossom water
  • 1 egg white
  • Grapefruit peel for garnish


Chill espresso in a Hyperchiller or freezer until room temp or below. Add mango, oleo, orange blossom water, espresso, and egg white into a shaker. Dry shake (no ice) or blend with a hand frother until the ingredients are emulsified and a form has formed from the egg white. Add ice and shake for 30 seconds or until the tin is cold. Strain into drinking vessel.

Express a grapefruit peel over top of the drink’s form, this can be done traditionally by twisting the peel or you can express it over a small flame for some extra flare. Take in the aroma and enjoy.
