Sheep’s Clothing - A Ramos ‘Tea’ Fizz

This drink is equal parts infuriating and delicious.

INGREDIENTS

SHEEP’S CLOTHING

2oz Earl Grey concentrate

3/4oz lavender syrup

1/2oz yuzu juice

2 dashes orange blossom water

1oz heavy cream

1 egg white

4oz club soda

BUILD

Brew an Earl Grey concentrate by steeping twice the amount of dry tea you typically would. Allow it to fully cool.

In a cocktail shaker, add the tea concentrate, syrup, yuzu, orange blossom water, egg white, and heavy cream. You can either vigorously dry shake this for 45 seconds or use a handheld milk frother to aerate and emulsify it for the same amount of time.

Add ice and shake once more to chill.

In your serving glass, add 2oz of club soda. Strain 3/4 of the mocktail liquid on top of the soda, creating a reaction and stiff foam. Wait for a full minute for the drink to set. Add the remaining 2oz of club soda into the shaker with your remaining drink base before slowly pouring into the center of the foam. This will cause the foam to rise above the rim of the glass if done correctly.

Serve with a straw.
