Hailing from the Rosaceae family, the raspberry in this drink lends a tart, refreshing bite to the sweet orange juice and coffee. It doesn’t sound like a combination that works but my word, does it ever.
What You'll Need
Equipment
- Plastic bag or mortar and pestle
- Cocktail shaker
- Espresso machine
- Milk frother (optional)
- Fine mesh strainer
- Coupe glass
Summer Rosaceae
- 3/4oz raspberry syrup (I prefer Liber & Co.)
- 1.5oz fresh orange juice
- 3 dashes cardamom bitters
- 2oz freshly pulled espresso
- Freeze-dried raspberry dust for garnish
Build
- Crush a handful of freeze-dried raspberries in a plastic bag or with a mortar and pestle.
- In a cocktail shaker, add the raspberry syrup, orange juice, bitters, and espresso.
- Dry shake without ice for 30-40 seconds or use a hand-held frother to whip the mixture until doubled in size.
- Add ice into the shaker and shake again until the tins are frosted.
- Double strain the drink into a coupe glass.
- Dust the surface of the drink with the raspberry powder.
