Named for one of the first fictional vampires, this drink is blood red and bittersweet. I think Carmilla would like it.
A fun science-y note: The frothy texture and head that forms on this drink comes from the pineapple juice. The Bromelain enzyme in pineapple juice breaks down proteins and allows more air to be introduced when shaking. The effect is similar to what you might experience if you added an egg white.
What You'll Need

- Cocktail shaker
- Muddler
- Clean clothespin
Carmilla’s Kiss
- 3 large blackberries
- 1/2oz honey
- 2oz cold brew coffee
- 1oz pineapple juice
- 3/4oz fresh lemon juice
- 4 fresh basil leaves
Build
- In a cocktail shaker, add the blackberries and honey.
- Use a muddler to muddle the berries until they’re jammy, approximately 5 seconds.
- Add the cold brew, pineapple juice, lemon juice, and three of the basil leaves to the shaker.
- Shake vigorously with ice until the tins are frosted.
- Double strain into a coupe glass.
- Clip the final basil leaf to the glass with a small clothespin or place it on the surface of the drink.
