Bananas Foster Latte
Latte
“B” stands for bananas foster! This latte is unbelievably decadent but I think the real star here is the banana milk, which can and should be consumed on its own.

500g milk of choice
50g dark brown sugar
4g vanilla paste
2g almond extract
1 ripe banana, peeled
Heavy pinch of salt

5oz banana milk
- 2oz freshly pulled espresso
1 banana, for garnish
Dark rum or lemon extract, for garnish
Sugar cube, for garnish
Ground cinnamon, for garnish
Build

Add the milk, vanilla, almond extract, salt, and banana to a blender. Blend on high for 30-45 seconds or until the banana is fully broken down.
Place a cheesecloth in a sieve and set it on top of a bowl or pitcher. Pour the contents of the blender into the cheesecloth.
Use a spoon to press the banana milk through the cheesecloth. Discard any leftover banana fibers.
Bottle and store the banana milk in the fridge for up to 3 days.

To a glass full of ice, add the banana milk and espresso. Stir to combine or serve layered with a straw.
To make the garnish, trim off the end of the banana and slice a 1-inch thick piece. Leave the skin on for this.
Use a small spoon to scoop out half of the banana fruit from the slice.
Place a sugar cube in the hollowed out banana slice and pour just enough rum or extract on it to soak it.
Nestle the banana slice on the top of the latte. Add more ice to stabilize it if needed.
Use a lighter to ignite the sugar cube and alcohol.
Sprinkle cinnamon over the top of the drink using a shaker. Be careful, because it will spark. Keep your fingers at least 6-8 inches above the flame.
Blow out the flame before drinking.
