“A” stands for amaretto! This syrup and subsequent latte replicates the flavor of Italian amaretto with orange peels, brown sugar, and almond extract. It’s truly scrumptious, if I do say so myself.

250g dark brown sugar
125g water
15g almond extract
4g vanilla paste
3g whole allspice, lightly crushed
Peels from one orange

¾oz amaretto syrup
- 2oz freshly pulled espresso
5oz milk of choice
4 drops orange blossom water (optional)
Sea salt for garnish
Cocktail cherries for garnish

Peel the orange. Lightly crush the allspice with a mortar and pestle or back of a spoon.
Add the brown sugar, water, peels, and allspice to a saucepan on medium- high heat. Bring to a simmer.
Allow it to simmer for 5 minutes before removing from heat.
Add the almond extract and vanilla paste. Stir to combine.
Let the syrup cool to room temperature before straining out the solids with a fine sieve. Bottle and store in the fridge for up to two weeks.

Add the syrup and espresso to a cup and stir.
Add the milk to a steaming pitcher.
(Optional) If using, add the orange blossom water to the milk.
Steam and pour the milk into the espresso.
Garnish with a light sprinkle of sea salt on the surface of the latte and two speared cherries.
